Vegan Chickpea Blondies Recipe
Makes 12 blondies | VEGAN, GLUTEN-FREE
Ingredients:
• 2 tbsp Plant Collagen Mix
• 1 can chickpeas
• ⅓ cup creamy almond or cashew butter
• ⅓ cup almond flour
• ¼ tsp baking powder
• ¼ tsp baking soda
• 1 tsp cinnamon
• ¼ cup maple syrup
• 3-4 large Medjool dates
• ½ cup organic dark chocolate chips or cacao nibs
Directions:
- Preheat oven to 350℉ and grease an 8x8 pan with coconut oil.
- Drain and rinse chickpeas under cold water.
- Add all the ingredients except the chocolate chips to a high-speed blender and blend until smooth.
- Gently fold the chocolate chips into the batter.
- Transfer batter to the prepared baking pan and spread evenly.
- Bake for 25-50 minutes or until a toothpick inserted comes out clean and the edges are brown.
