Thistle's Golden Mellow Smoothie

We partnered with our friends at Thistle to create a smoothie using our best-selling Golden Mellow Mix. This tumeric smoothie is layered on top of chia pudding, and topped with delicous granola.
Golden Mellow Smoothie Recipe
Makes 2 Servings
Layer 1: Vanilla Chia Pudding
Ingredients
2/3 cup oat mylk (or plant-based mylk of your choice)
2 tsp maple syrup
1/2 tsp vanilla extract
pinch of sea salt
1/4 cup chia seeds
Directions
Whisk together oat milk, maple syrup, vanilla and salt.
- Add the chia seeds and stir to combine.
- Let the mixture sit in the refrigerator for at least 30 minutes (mixing again halfway through) until the chia seeds have plumped and the pudding has thickened.
Layer 2: Smoothie Base
Ingredients
2 tsp Plant Protein Mix
1/2 tsp Golden Mellow Mix
1/3 cup plant-based milk
2/3 cup frozen peaches
1 cup frozen banana slices
1 tbsp maple syrup
Pinch of sea salt
Directions
Blend all ingredients in the blender until smooth.
Pour into a glass and enjoy!
Layer 3: Granola
Ingredients
2 tbsp slivered or sliced almonds
2 tbsp shredded coconut
1.5 tbsp hemp seeds
2 tsp sunflower seeds
1/2 tsp coconut oil
1/2 tsp maple syrup
Pinch of pink himalayan salt
1 tsp dried cranberries
1 tsp golden raisins
1 tsp goji berries
Directions
Preheat the oven to 300 degrees F.
Mix the almonds, coconut, hemp & sunflower seeds with the melted coconut oil, maple syrup and salt.
Spread out the granola mix and bake, mixing often, to ensure the mix is completely golden brown and crunchy (about 10-15 minutes)
Remove from the oven and let cool.
Once cooled, mix in the dried fruit.
Assemble the smoothie
Using a clear glass or jar (so you can see the layers), begin with a 1/2 cup layer of the vanilla chia pudding.
Carefully add half of the Golden Mellow Smoothie over the chia pudding and then sprinkle with granola.
