Getting out of bed isn’t so hard when you have these delicious apple cinnamon pancakes to wake up to! They’re perfect to enjoy on a weekday morning, or even for Saturday brunch with a loved one. Plus, they only take 5-minutes to make!
With notes of cinnamon and apple, this vegan pancake recipe is so flavorful- every bite tastes like a childhood treat. Unlike store-bought recipes, these pancakes are made with whole food ingredients! Forget fillers and additives, this recipe is hearty AND healthy.

Apple Cinnamon Pancake Recipe
Makes 8 pancakes
Ingredients:
2 tbsp Plant Protein Mix
2 tsp Energy Bomb Mix
1 apple, finely diced
1 ½ cups plant-based milk
½ cup oats
¼ cup unsweetened applesauce
2 tbsp maple syrup
2 tbsp melted coconut oil
1 tbsp flax seeds
1 tbsp ground cinnamon
1 tsp baking powder
Toppings (e.g., maple syrup, fruit, nuts, etc.)
Directions:
Blend all of the ingredients (except diced apple) in a high-speed blender until smooth.
Set the batter aside for a few minutes to let it thicken.
Fold in the diced apple.
Heat a large skillet (if your skillet’s not non-stick, use coconut oil to grease it).
Spoon ¼ cup of the batter for each pancake onto the skillet.
Cook on both sides and repeat with the rest of the batter.
Stack the pancakes up, add your favorite toppings and serve.
